More about the cookoff
Do you think your chili is darn good? Is that family gumbo recipe award-winning? Find out by registering yourself or a team. But hurry! The registration cut-off could be any day now.
If you are more into sampling than submitting, you are in luck. There are three main cookoff categories, which means plenty for you to taste.
First, there is traditional chili. Second, there is non-traditional chili. Third, there is gumbo.
Any chili in the competition could be meatless or beanless. It could include sausage, chicken, turkey or be vegetarian. Be prepared to cook your chili on site on Saturday, February 11th. Chili should be ready to eat no later than 1:30 p.m.
As for the gumbo, it too will be prepared on site the day of the cookoff. It will also be from scratch, roux included! The gumbo can feature seafood, sausage, chicken or a combination of these. The gumbo and fixings, if you want them, will be ready at noon.
And don’t worry. The rules specify that each team or individual must make a gallon of chili or gumbo for both the judges and the public to enjoy.
